  • Yellow Goatsbeard (Tragopogon dubius).  This European import is named for the resemblance of the fruiting head to a goat's beard.  The flower head opens in the morning and is generally closed by noon.  The swollen stem below the flower head is filled with milky sap and indicates that this is Yellow Goatsbeard, not Meadow Salsify (T. pratensis).  The basal leaves of this plant can be eaten raw or as cooked greens (Niering & Olmstead).
