Oyster Plant (Tragopogon porrifolius).  Naturalized in fields and meadows throughout the United States and considered an herb, this plant is recognized by its grasslike leaves and long-stemmed purple flower heads.  The taproots are edible and when cooked, taste like oysters.  When going to seed, the plant resembles dandelions
