Chickory (Cichorium intybus).  This stiff-stemmed, blue flower is found along roadsides and fields.  While it blooms between June and October, it only has a few flower heads open at a time, and each only for a day.  While this is a non-native plant that has become a pest in some areas, it has been cultivated for its food uses.  The roots can be roasted as a substitute for coffee.
